Dreams Resorts and Spas to Open in Costa Rica in 2021

AM Resorts has signed on for a new Dreams Resort and Spa in Costa Rica. The 400-suite property will be the company’s first in the country, and the fourth in AM Resorts’ portfolio. The resort will be situated in Santa Elena, north of Papagayo, about an hour from the Liberia Airport, near the border with Nicaragua and adjacent to a national park. St. Lucia & Antigua: Home

As many of you know I recently was blessed with the opportunity to visit the Caribbean for two weeks. The plan was to arrive in St Lucia on March 31 and stay until April 13. Arriving at the airport that morning I received the surprise of a lifetime from my loving husband Jonathan. As we rushed into the airport as we always do heading to the Delta ticket counter Jonathan stops and takes both of my hands and looks me in the eye. I though oh no we have forgotten something or perhaps we had the wrong day of departure. As a million things swirled around in my head I could only hold my breath and wait... Jonathan began to grin and told me he loved me and told me he had a surprise for me. There was a change in plans and instead of going to St. Lucia for two weeks we would be visiting the island in which we were married Antigua for the first of the two then onto St. Lucia. I was so touched at his thoughtfulness and whimsical romantic surprise. I could not fight tears and threw my arms around him thanking him and telling him how much this meant to me. We strolled to the ticket counter and checked baggage and then retreated to the Sky Lounge for breakfast and mimosas to celebrate.

Red Stripe Chicken

I know exactly what I am cooking tonight to lift my spirits in this frigid weather.

Red Stripe Chicken

INGREDIENTS :

¼ cup vegetable oil
3 pounds chicken
2 cups canned coconut milk/cream
1 cup Red Stripe beer
1 Large onion (chopped)
1 large green bell pepper
Salt and pepper

METHOD:

Cut the chicken into serving pieces
De-deseed green bell pepper and chop up onion
Heat vegetable oil in Dutch pot
Brown the chicken in oil (both sides)
Remove the chicken
Pour off some of the oil.
Leave 2 table spoon of oil in the pot
Return the chicken to the pot
Add the coconut milk and red strip beer
Once the pot is boiling reduce to heat to a simmer
Cook for 30 minutes
Add onion, bell pepper
Add salt and pepper to taste
Let simmer for 15-20 minutes as the liquid reduces and thickens.
If the liquid evaporates before the chicken is done replenish more Red Stripe beer.
Serve while hot
Serving size 4-6

I woke up early this morning to thoughts about one of my favorite resorts in Camps Bay just minutes away from Cape Town. This resort stands at the edge of the world. It reaches toward heaven as the sun sets on breeching whales, playful dolphins, and crashing Atlantic rollers. This luxury 5-star boutique hotel is sheltered by the wilderness trails of the Table Mountain National Park. All can be taken in by relaxing on the golden beaches of The Twelve Apostles.

The staff and service will melt your troubles away as the most difficult decision whilst staying here will be deciding whether to overlook the mountains or the sea. The resort boasts 55 deluxe guest rooms and 15 luxurious suites. The guest rooms and suites adorn a contemporary African style, classic European comfort and effortless, up-to-the-minute technology. As I close my eyes I appear relaxed and completely serene lounging on the terrace of the Presidential Suite. You have two bathrooms, two toilets, and a stunning wrap-around balcony with a surreal views of sea, mountains, and fynbos wilderness.

The Azure Restaurant with its cape fusion cuisine was awardedprestigious Chaîne des Rôtisseurs Blazon award, given to professional members such as an owner, manager or executive chef of a dining or hotel establishment maintaining a superb level of cuisine, service and hospitality, as required by the exacting standards of the Chaîne internationally. Though my travel and research of different destinations and resorts I come across a few that even though I have never been the sheer imagery and stories leave an imprint on my heart forever. From that moment on I yearn to visit and experience life as the locals do. Welcome a to slice of heaven that my mind could only imagine exist introducing the Maldives...
